This organically-farmed oil comes to us from Pagona Tsapatsari’s 16.3 hectares of land, where she and her family cultivate olives and figs. Their groves face the sea, making up the region’s semi-mountainous terrain. This, along with the focus on quality, is why they harvest by hand with as few mechanical methods as possible.
